Curried Cauliflower Rice

Kale has been the super star vegetable for several years now. Move over kale, because cauliflower is the new veg to steal the spotlight.  From cauliflower pizza crust, no rice vegan sushi, to cauliflower rice. Cauliflower is a versatile vegetable full of antioxidants and an anti cancer super power. The texture of cauliflower rice can be accomplished through using the blade in a food processor.  Many stores now accommodate the craze by offering ‘cauliflower rice’ for sale. I prefer the fresh version, as it stays crisper. Of course it’s a treat to cut corners when we can, especially since my busy life living in San Francisco. I grasp on to the moments that I can linger in bed or quietly sip my tea in the morning before the hustle of heading into work or hitting the road for an outdoor adventure. I may cut corners when arriving home late from a long bike ride or as an easy way to pack food when spending the day rock climbing on a mountain. However, cutting corners all of the time takes away the art of enjoying cooking food, as well as negatively impacting the environment with how we spend our dollar. Ready made food is not going to be locally sourced from the farmer that gives loving detail to his crops, it most certainly will contribute to overflowing land fills with extra unnecessary packaging, and leave a carbon footprint from the truck that shipped the packaging across the country.  With intent to focus on the practice of mindfulness, the gentle reminder is to shop locally sourced, avoid GMO, avoid packaged foods, and plan to prep food ahead.
This version of cauliflower rice is bursting with flavor from the savory curry, richness of coconut, the sweetness from raisins, and balance from California almonds.
Health Note: Cauliflower contains sulforaphane, a sulfur compound that has also been shown to kill cancer stem cells, thereby slowing tumor growth. Some researchers believe eliminating cancer stem cells may be key to controlling cancer.
Curried Cauliflower Rice
  • ½ large onion, diced
  • ½ tsp sea salt
  • 2 tbsp avocado or coconut oil, divided
  • 2 cloves garlic, finely chopped
  • 1 tbsp curry powder
  • 1 tsp cinnamon
  • 1 tsp fresh ginger minced
  • ¼ cup shredded unsweetened coconut
  • ¼ cup almonds pulsed in food processor
  • ¼ cup raisins
  • 1 medium head cauliflower, riced
  • Large handful finely chopped cilantro
  • Sea salt and pepper, to taste
In a large skillet over medium heat, add one tablespoon of oil. When the oil is hot, add the onions and salt. Cook and stir the onions until softened, about 5 minutes, until they become translucent.
Add in the garlic, almonds, raisins, ginger, coconut, curry powder and cinnamon. Stir until combined well and cook for another minute.
Increase the heat to medium-high, add the other tablespoon of oil, and dump in the cauliflower. Cook for 3 to 4 more minutes, stirring frequently, until it's softened but not mushy.
Remove from the heat, and stir in the cilantro. Check flavor and add salt and pepper to taste.

Welcome to Slice of Emma recipe blog featuring healthy recipes that are vegan and based on whole foods.  For the past seven years I have shared recipes with friends and family and past two years through my blogging.  I completed a certification at Southwest Institute of Healing Arts in Arizona in Holistic Nutrition.  I take pride in that my recipes are not only delicious, but the science behind them makes for ingredients that nurture and balance the body.  My recipes are all gluten free and vegan.  My full time career is working in the oncology bio-tech space. Working around patients who are very sick has taught me the value of living a healthy lifestyle each and every day in order to lower the risk of disease later in life.  My whole foods diet keeps me energized to work hard and fuel my fitness routine.  Slice of Emma will also feature not only my voracious appetite in the kitchen but also my travel adventures including mountain hikes sometimes shared with Jes the CCC and international travel.
