Recipe #5 :: Pumpkin Risotto

I celebrated the blood moon at Trilogy Sanctuary in La Jolla with yoga, vegan food, and a drum circle with both new and old friends.  The fall solstice and the blood moon upon us brings inspiration to let go of what is no longer serving us and welcome fresh perspectives and Prana (life energy).  I occasionally like to cycle through all of my bulk foods to bring in new flavors and foods.  The last of my bulk food included a can of pumpkin and the last of my Arborio rice.  I used herbs from my cabinet, fresh garlic and onion, and pumpkin and rice together for a rich and aromatic pumpkin risotto.  Now my shelves have room to stock with fresh ingredients; with the farmer’s market vegetables as the main star.  You can also sub fresh pumpkin or butternut squash if available. 



  • 1/3 cup extra virgin oil
  • 1 cup chopped onion
  • 1 tbsp garlic
  • 1 1/2 cups Arborio rice
  • 1/2 cup dry white wine
  • 2 1/2 cups veggie stock
  • 1 can canned pumpkin
  • 2 tbsp vegan butter


In a medium size saucepan, heat olive oil to medium high heat.  Add onion and garlic and sauté, stirring continuously, just until softened, 3 minutes. Add rice and continue to stir.

Add white wine and continue cooking, stirring often.  Stir until consistency is rich and thick. Pour veggie stock to cover rice completely. Continue to cook, stirring often, until absorbed.

Pour in half of veggie stock and stir and cook until it is absorbed. Repeat with 1 additional cup of stock.  Add remaining cup and cook, stirring the rice until al dente.

Stir in the pumpkin puree and reduce the heat to very low. Stir in vegan butter for a creamy finish. Serve in shallow service bowls.

Hi, I am Emma Wilkiemeyer. Welcome to Slice of Emma recipe blog featuring healthy recipes that are vegan and based on whole foods.  For the past seven years I have shared recipes with friends and family and past two years through my blogging.  I completed a certification at Southwest Institute of Healing Arts in Arizona in Holistic Nutrition.  I take pride in that my recipes are not only delicious, but the science behind them makes for ingredients that nurture and balance the body.  My recipes are all gluten free and vegan. 

My full time career is working in the oncology bio-tech space. Working around patients who are very sick has taught me the value of living a healthy lifestyle each and every day in order to lower the risk of disease later in life.  My whole foods diet keeps me energized to work hard and fuel my fitness routine.  Slice of Emma will also feature not only my voracious appetite in the kitchen but also my travel adventures including mountain hikes sometimes shared with Jes the CCC and international travel.  Please reach out to me anytime you have a question whether it be about travel or my recipes.

My life recipe is simple- Nourish the body with clean food and exercise, and feed the soul with life’s rich experiences whether it be through getting out in nature or positive relationships with the people in my life.
